Yaki udon
If you’re a fan of udon noodles, Yaki udon must be in your meal list frequently. This is a Japanese noodles stir-fry dish with the main ingredients are from two sources: the vegetables and the protein one. Let try the below simple recipe to prepare Yaki udon with the ingredients as you wish.

For the stir-frying udon
360 g
fresh udon
200 g
pork (thinly sliced)
100 g
cabbage (cut into large bite size pieces)

carrot (thinly sliced diagonally)
25 g
shiitake mushroom (thinly sliced)
2 stalks
shallots/ scallion (cut to 5 cm long)
1 tablespoon
oil
1/2 tablespoon
sesame oil
For the sauce
2 + 1/2 tablespoons
soy sauce
2 + 1/2 tablespoons
cooking sake
1 teaspoon
mirin
1 tablespoon
sesame oil
For the topping

bonito flakes (2 packs)

Mix the sauce ingredients and set aside.

Untangle the udon noodles by quickly toss them under running water then drain them.

Heat the oils in a large frying pan over medium high heat. Add the pork slices and saute them until cooked through, about 1 – 2 minutes.

Add the carrot to the pan, stir fry for 30 seconds, then add the cabbage and mushrooms. Stir fry all the ingredients about 1 minute, then add the shallots. Stir the mixture well then add the udon, continue stirring until the noodles star browning.

Add the sauce to the noodle’s pan and stir so that all the ingredients are well coated. When the the liquid had almost evaporated, turn off the heat.

Transfer the noodles onto the plates, top with bonito flakes and serve warm.
