1/2 tablespoon
gelatin
2 tablespoons
water
2 cups
heavy whipping cream
1/2 cup
granulated white sugar
1
vanilla bean (both ends removed)
1
Cut the vanilla bean into half lengthwise, open it and scrape out the seeds. Set aside.
2
Add water into a small bowl and sprinkle the gelatin over the top. Let the gelatin sit for 5 – 10 minutes to bloom.
3
Meanwhile, combine the heavy cream, sugar, vanilla seeds with pod in a heavy-bottomed medium saucepan and bring to a boil over medium-high heat. Once the mixture reached a boil, remove the pan from heat and discard the vanilla pod. Add the gelatin into the cream mixture and whisk until dissolved.
4
Once the gelatin has completely dissolved, pour the mixture through a fine mesh sieve (to strain out the bubbles and the vanilla pod pieces) to molds, leave about ¼-inch space on the top.
5
Transfer the molds to the fridge to chill for at least 8 hours or overnight before serving.
