Tostilocos are popular Mexican street food. This dish is the perfect combination of salsa verde flavored chips with bacon, pickled cucumbers, and onions, like the recipe below.

For the pickles

1/4 cup

freshly squeezed lime juice

1/2 tsp

dried oregano (preferably Mexican)

1/2 tsp

kosher salt

sugar

red onion (peeled and thinly sliced)

cucumber (peeled and cut into half moons)

For the Tostilocos

salsa verde flavored chips

1 heaping tbsp

tamarind candies

1 heaping tbsp

Japanese peanuts

3 slices

bacon (cooked through but still pliable, sliced)

1/4

jicama (peeled and sliced into thin sticks)

How to do

For the pickles: Whisk lime juice, oregano, salt, and sugar in a small bowl until combined. Mix in sliced onion and cucumber until soaked in the pickling liquid. Leave the pickles to rest for 1 – 3 hours at room temperature to marinate, tossing every 30 minutes. Cover and place the pickles in the refrigerator.

Layer the chips on a large plate. Spread some of the pickled onion and cucumber, candies, peanuts, bacon, and jicama on top of the chips. Arrange a layer of chips and sprinkle with toppings (pickled onion and cucumber, candies, peanuts, bacon, and jicama). Garnish with fresh lime juice, chamoy, hot sauce, and chopped fresh cilantro. Serve.
