Split pea and ham soup

split green peas

kosher salt
1/2 teaspoon
black pepper
1 teaspoon
dried thyme leaves

water

medium carrots (peeled, halved lengthwise, sliced)

small yellow onions (diced)

celery stalks (diced)

ham (cubed)
2 tablespoons
lemon juice
2 tablespoons
chopped fresh cilantro (optional)

Place the peas, salt, pepper and thyme together with the water in a large stock pot, stir well and bring to a boil over high heat. Once the water reaches a boil, lower the heat and simmer the ingredients, covered, for 1 hour.

Add carrots, onions and celery into the pot, stir and cook for 25 minutes or until tendered.

Add diced ham into the pot, stir and cook for another 10 minutes.

Add the lemon juice into the soup and stir well. Taste the soup to adjust the salt and pepper if needed.

Once done, ladle the soup into bowls, sprinkle with cilantro if desired and serve.
