Snickerdoodle
Snickerdoodle is a type of cookie that may have the origination from the US. The cookie is consumed popularly here as well as in Canada. Snickerdoodle is made from flour, sugar, oil or butter, egg possibly, cream of tartar, baking soda then rolled in cinnamon-sugar before baking. This soft and chewy cookie will be a perfect treat to snack of tea times with family and friends.

For the cinnamon sugar
3 tablespoons
granulated sugar
1 teaspoon
cinnamon
For the cookies
1 1/2 cups
granulated sugar
1/2 cup
unsalted butter (softened)
1/2 cup
shortening

large eggs
2 3/4 cups
all purpose flour
2 teaspoons
cream of tartar
1 teaspoon
baking soda
1/4 teaspoon
kosher salt

Preheat the oven to 190oC/ 375oF. Prepare 2 cookie sheets lined with parchment paper.

Combine the cinnamon sugar ingredients in a small bowl and set aside.

Place sugar, butter and shortening in a large bowl and beat together until fluffy. Add eggs into the bowl and continue to beat until incorporated and smooth.

Add the remaining ingredients into the bowl and mix until well blended.

Use a cookie scoop to scoop out the dough and roll into ball. Roll the balls in the cinnamon sugar mixture and place about 5 cm/ 2 inch apart, onto the prepared pans.

Bake the cookie dough for 8 – 10 minutes. Once done, remove the pan from the oven and transfer the cookies to wire rack to cool down completely before serving or storing.
