Refrigerator pickles
Refrigerator pickles are popular condiment that can be served as a snack, side dish, or topping to sandwiches or burgers. large onion (halved and sliced)

green onion (cut into 5 cm/ 2 inch pieces)

Halved the carrots lengthwise then cut them into 5 cm/ 2 inch pieces. Cut the peppers into 2.5 cm/ 1 inch pieces. Set aside.

Combine sugar, vinegar, 2 types of seeds and salt in a saucepan then bring to a boil over medium heat, stirring the mixture well to dissolve the sugar. Meanwhile, place the veggies in a large bowl.

Pour the hot liquid over the veggies in the bowl and toss well. Let the mixture cool down completely then transfer to sterilized jars, cover tightly and place in the fridge for at least 6 – 8 hours before serving. The pickles can be stored in the fridge up to 1 month.
