Puffball mushroom stir-fried
Puffball mushroom is one of the largest mushrooms in the world. Its name is due to the ball shape-like although they are range widely in size from tiny to large species. giant puffball (diced into 2.5 cm cubes)

butter

onion (diced)

garlic cloves (minced)

lemon (zest grated)

Use a large heavy-bottomed skillet to melt the butter. Add the garlic to the skillet to sauté until fragrant then add the onion, stir and cook until translucent (about 5 minutes).

Add the puffballs into the skillet, sprinkle with salt and cook for about 7 – 10 minutes, stirring occasionally. The puffballs should have shrunk in size and golden brown in spots then.

Add the pepper and lemon zest to the skillet and cook for 1 minute more.

Squeeze the juice of the lemon over the mushroom, sprinkle with parsley and toss. Season the mushroom with more salt if desired.
