Pinto beans are the type of beans that cropped and consumed popularly in Northern Mexico and the Southwestern of the US. The beans are commonly eaten as side dish or part of a main dish in the above countries as well as other areas. Let try to make a simple pinto bean dish using the instant pot to serve in any of your family meal.

cooking oil

small onion (chopped)

2 1/2 cups

dried pinto beans (rinsed)

4 cups

chicken/ vegetable stock

1 cup

water

2 tablespoons

taco seasoning

1 1/2 teaspoons

sea salt

2 tablespoons

bacon drippings

How to do

Set the instant pot to sauté setting then heat the oil and add the onion to cook, stirring frequently, for 4 – 5 minutes or until translucent. Add the remaining ingredients into the pot and stir well.

Secure the lid of the instant pot, seal the valve and cook the beans on high pressure for 1 hour.

Once done, let the pot release the pressure naturally for 15 – 20 minutes then move the valve to venting position to release the remaining steam.

Open the instant pot, taste the beans to adjust the seasoning if needed. Serve warm.
