Pastelon de platano maduro
If you want to enjoy simple authentic Dominican food, try the following pastelon de platano maduro recipe. You can assemble it the night before. Then refrigerate and heat it up the next day. The flavors are so much better the following day.

For the filling

olive oil

red onion (minced)

mashed garlic
1 pound
minced beef

tomato sauce

bell pepper (seeded and minced)

pepper (freshly-cracked, or ground)

chopped cilantro
To assemble

peeled plantains (ripe, yellow)
1 tsp
salt
1/4 cup
butter (salted)
1 cup
shredded cheddar cheese

For the filling: Pour olive oil into a pan and heat over medium-low heat. Add onion and stir until translucent. Stir in garlic for a minute. Stir in minced beef, breaking it into small pieces, until brown. Stir in tomato sauce and bell pepper. Season the meat mixture with salt and pepper, stirring constantly. Then cover the pan and simmer for 3 minutes. Remove the meat from the heat.

Boil the plantains for 15 - 20 minutes in salted water until tender. Remove them from the heat. Use a fork to mash the plantains. Then mash with butter until the mixture turns smooth and free of lumps.

Preheat the oven to 350oF/175oC. Prepare a greased 1-inch tall baking pan. Spread half of the plantain mixture into the prepared baking pan. Sprinkle with half of the cheese on top. Then, spread the meat mixture and cover it with the remaining plantain mixture. Spread with the remaining cheese.

Bake it until golden brown on top. Remove it from the oven and let it cool for about 5 minutes before serving.
