block whole milk Mozzarella cheese

eggs (beaten)
3 cups
Italian style breadcrumbs (placed in a bowl)

Tallow (beef fat)

Cut the cheese into pieces 1-cm thick. Add salt and water to the egg bowl and whisk until combined. Dip the cheese sticks into the egg mixture, then coat them in the breadcrumbs. Gently shake off the excess breadcrumbs and place the cheese sticks on a tray. Dip each cheese stick through the egg and breadcrumbs again for a second coating. Freeze the cheese sticks for 2 - 3 hours.

Heat the tallow to 175oC in a deep fryer. Dredge each Mozzarella stick in the fryer until golden brown on all sides. Drain the cheese sticks on a plate lined with a paper towel. Serve fried Mozzarella sticks with favorite dunking sauce.
