Mini meatloaf muffins
Mini meatloaf muffins is a very suitable dish for your kids. The mini meatloaf form on the dinner plate would be easily accepted by them. Let try this recipe to make those cute muffins from beef.

For the meatloaf
700 g
lean ground beef
1/2
onion (finely diced)
1/2
green pepper (finely diced)
3/4 cup
seasoned bread crumbs
1/4 cup
barbecue sauce
1 tablespoon
Worcestershire sauce

egg
2 tablespoons
parsley
1 teaspoon
salt
1/2 teaspoon
pepper (optional)
For the sauce
1/3 cup
ketchup
1/3 cup
chili sauce
1 tablespoon
brown sugar

Preheat the oven to 425oF (220oC). Grease 10 muffin pans and set aside.

Combine all the sauce ingredients. Set aside. If you prepare the meatloaf for kids, you could reduce or cut off the chili sauce amount and increase the ketchup instead.

Cook onion over medium heat with 1 tablespoon oil for 5 minutes or until tender. Let the onion cool completely. This step is optional to reduce the onion flavor. You could combine the onion directly to the beef.

Mix all the ingredients to make meatloaf, and add in it ¼ cup of the sauce. Stir the mixture until well combined.

Divide the mixture evenly the muffin pans. Top each mini meatloaf with 1 tablespoon of the sauce.

Bake the meatloaf for 22 – 26 minute, or until cooked through. Let them rest 5 minutes before serving.
