Mini dragon eggs

ground sausage (divided into 8 portions)
fine dry bread crumbs
shredded chedder cheese

Preheat the oven to 375oF/ 191oC. Sprinkle some bread crumbs on a clean surface. On that surface, pat out each sausage portion to a thickness of 1/8 inch. Sprinkle with 2 tbsp of shredded cheese. Wrap each patty around each hard-boiled egg and press the edges together to seal the egg.

Dip each sausage-wrapped egg into the beaten egg and then into the bread crumbs. Lay the dragon eggs on a baking sheet and bake for 20 minutes until lightly browned. Transfer the mini dragon eggs to a plate and serve.
