Mexican casserole
This Mexican casserole is a pretty mild recipe. It is also delicious and easy to make. You can make this for a family camping trip, everyone just loved it. With the below recipe, serve over corn chips with lettuce and salsa on top if desired.

crushed tomatoes

corn tortillas (cut into quarters)

sour cream

shredded cheddar cheese

Pan-fry meat until brown in a large skillet and drain. Add taco seasoning, beans, tomatoes, and crushed tomato to the skillet, stir well.

Place a layer of tortillas on the bottom of a greased 13×9 casserole dish. Spread half of the meat mixture over the tortillas and sprinkle with half the cheese.

Preheat the oven to 175oC. Place the rest of the tortillas on top and pour the remaining meat mixture over it. Then top with the sour cream, and sprinkle with the remaining cheese.

Bake the Mexican casserole for 20 minutes. Once the top cheese foams, remove it from the oven. Serve Mexican casserole warm with tortilla chips and salad.
