Mapopo
Mapopo is a Zimbabwean candy made from papaya. The papaya is slice and cook in sugar until crystallizes. To increase the flavor of the candy, lemon zest and mint leaves can be added. This is an easy to make sweet that perfectly served at snack or teatimes like any other sweets that you have enjoyed.

papaya (ripe but still firm)
2 cups
sugar
2 teaspoons
grated lemon zest
1 teaspoon
fresh mint leaves (finely chopped)

Peel, wash and remove the seeds with the membranes of the papaya. Cut the papaya into strips or cubes.

Place the papaya, mint, lemon zest and sugar in a heavy-bottomed pan. Stir and cook the papaya over low heat until the sugar dissolves completely. Then continue to cook the papaya for 10 minutes.

Remove the pan from heat and let the papaya sit in the syrup for 30 minutes.

After 30 minutes, place the pan back over medium-low heat and continue to cook the papaya, stirring often, until the sugar crystallizes around the papaya strips/ cubes.

Turn off the heat and continue to stir the papaya until completely dried.

Let the papaya cool down completely before serving or storing.
