Lentil soup
Lentil soup is fatty, easy to cook, and nutritious, so it is a favorite vegetarian dish of many people. The simple recipe for lentil soup at home is as follows.

diced onion

olive oil

freshly minced garlic
4 cups
vegetable broth
1 can (14,5 ounces)
fire roasted tomatoes (or crushed tomatoes)

red potatoes

dried lentils

oregano
1/4 tsp
turmeric
1/4 tsp
cumin
1/8 tsp
thyme
1/8 tsp (each)
salt, cayenne pepper

Add olive oil and diced onion to a large pot and heat to medium-high heat. Sauté until the onion is tender, stir in the garlic. Pour in the veggie broth and stir. Then add diced tomatoes, and cook until combined. Pour the soup mixture into a blender, and pulse until pureed.

Pour the soup mixture back into the pot and cook over high heat. Add dried lentils, red potato, and all your herbs and spices to the pot, and bring to a boil. Cover the pot and cook on medium heat for 30 minutes, then simmer the soup on low heat for another 10 minutes.

Ladle the lentil soup into a bowl. Serve hot with goat cheese, or sour cream, and chopped parsley as desired.
