Hush puppies
Hush puppies are the corn-meal based dish that originated in North America and got their name from the late 19th century, from the habit of hunters, fishermen or other cooks to feed their dogs with fried cornbread to quell their bark. The cornmeal, flour, seasonings, milk or buttermilk, leaven, and some other ingredients are mixed well then deep frying (in round/ finger shapes) until golden browned. These fries are commonly served with seafood, barbecued foods and other other fried-foods.

Place the cornmeal, flour, salt, baking powder, baking soda and sugar (if used) in a large bowl and whisk well.

Add the grated onion, egg, butter milk into the flour mixture and mix until well combined. Set aside for 15 minutes. Meanwhile, heat the oil.

In a Dutch oven or a deep frying pan, heat about 4 cm/ 1 1/2 inches of peanut or vegetable oil over medium-high heat to 185oC/ 365oF. Working in batches, scoop about 5 golf ball-sized rounds of the batter into the hot oil and fry until deeply browned on all sides, about 3 – 4 minutes, turning frequently.

Once cooked, remove the balls to a plate lined with parchment papers to drain. Let the oil temperature return to 185oC/ 365oF before starting a new batch until running out of the batter.

Serve hot with unsalted butter if desired.
