Goat trotters are the popular food that consumed in South and Central Asia, especially the Indian Subcontinent. Ingredient

600 g

goat trotters

2 tablespoons

cooking oil

5 g

cumin seeds

20 g

coriander seeds

10 g

black peppercorns

1 sprig

of curry leaves

green chilies

40 g

ginger (cut into match-strips)

50 g

garlic

250 g

red onion (sliced)

1 teaspoon

salt

1 teaspoon

ground black pepper

A handful

of coriander leaves

How to do

Heat 1 tablespoon of oil in a pot over medium heat then add the goat trotters to sear for 5 minutes, stirring frequently. Once done, remove the trotters to a plate and set aside.

In the same pot that seared the trotters, heat another tablespoon of oil over medium heat then add the cumin seeds, coriander seeds and peppercorns to sauté for 2 minutes.

Add the curry leaves, green chilies, ginger, garlic, onion and salt into the pot to sauté for 5 minutes.

Add the seared trotters into the pot to stir and cook for 1 – 2 minutes.

Add 2.5 liters of hot water into the pot, stirring well and bring to a simmer. Cover the pot with aluminum foil before putting a heavy lid on. Place a heavy bottomed pan under the pot, lower the heat and continue to cook the goat trotters over in-direct heat for 2 hours.

After 2 hours, open the lid of the pot and remove the aluminum foil. Taste the soup to adjust the amount of salt to your taste. Stir the ground black pepper and coriander leaves into the soup.

Turn off the heat and let the soup sit for 5 minutes before serving.
