Fruit cocktail cake
Fruit cocktail cake is a delicious and easy-to-make desert that you could prepare for the whole family, and no one could deny it, surely. It’s because of the soft and moist texture as well as the fruity flavor of the cake. Let try the recipe to give everybody a real treat soon.

For the cake

all purpose flour

large eggs (lightly beaten)

sugar
1/2 teaspoon
salt
1 teaspoon
vanilla extract
2 teaspoons
baking soda

fruit cocktail (undrained)
For the topping
1/2 cup
butter
1/2 cup
brown sugar
1/2 cup
granulated sugar
1 cup
evaporated milk
1 teaspoon
vannila extract
1 + 1/2 cup
grated fresh coconut (toasted)
1 cup
pecans (chopped)

Preheat the oven to 180oC (350oF). Prepared a butter greased pan (23 x 33 cm or 9 x 13 inch is best).

Add the ingredients of the cake: sugar, beaten eggs, vanilla, baking soda, and salt into a large bowl, mix well. Add the flour into the bowl, stir well. Finally, add the fruit cocktail with syrup into the bowl, fold to well combine. Don’t over mix the mixture.

Pour the mixture into the prepared pan, bake for 40 – 45 minutes. Check for doneness by inserting a toothpick into the center of the cake and it comes out clean.

Meanwhile, prepare the topping by adding the topping ingredients into a saucepan, stir well. Bring the mixture to a boil over medium heat for 1 – 2 minutes then turn off the heat.

Remove the cake from the oven. Pour the warm sauce over the warm cake and spread it evenly. Let the cake be soaked in the sauce for some minutes before serving. When serving, top the cake pieces with favorite topping like whip cream, ice cream, cherry,…if desired.
