Egg puffs
Puffs are an appetizer or tea time snack that sold very popular at stores and bakeries. They come in different varieties such as egg puffs, chicken puffs, or vegetarian puffs,…Egg puffs must be the most simply type to make among those. With the store bought puff pastry, this dish is even easier and quicker to make.

eggs (hard boiled, peeled, quartered lengthwise)

medium onion (finely chopped)

tomato paste
1/2 teaspoon
red chili powder
1/2 teaspoon
graham masala
1/3 teaspoon

puff pastry sheet (thawed)

Heat oil in a pan over medium heat. Add the onion to the pan and saute until translucent and lightly browned around the egg (about 4 – 5 minutes). Add tomato paste to the pan, cook for 1 minute then add salt, chili powder and graham masala with 1 – 2 tablespoon water. Cook the mixture for 2 – 3 minutes, stir it well. Remove the pan from heat and let the mixture cool down a little.

Preheat the oven to 190oC for 20 minutes. Prepare a baking sheet lined with aluminum foil.

Unfold the pastry sheet and cut along the fold, then cut each fold into 4 equal pieces (total 12 pieces).

For each pastry piece, add a teaspoon of onion mixture along the diagonal, place the quartered egg onto the mixture (the cut side down). Close the opposite ends of the pastry piece with a dab of water. Repeat to the rest of the pastry pieces and onion mixture.

Arrange the egg puffs onto the prepared baking sheet and bake for 20 minutes, until the puff pastry turns golden brown.

Remove the egg puffs from the oven, serve immediately with ketchup if desired.
