Cheesy shrimp and grits
Cheesy shrimp and grits is an easy and quick to make dish that popular served as breakfast in many regions of the US as well as other areas. It would cost you just about 30 minutes to get a light and nutritious meal for the family. Let try the dish for your next breakfast, everybody could love it.

For the grits
1 cup
yellow grits
4 cups
water
1/2 teaspoon
kosher salt
3 tablespoons
butter
1/3 cup
heavy cream
1 cup
shredded cheddar cheese
For the shrimps
6 strips
bacon (chopped)
1 lb
shrimp (peeled and deveined)
1/2 teaspoon
salt
1/2 teaspoon
pepper

scallions (sliced)
1 tablespoon
minced garlic
2 teaspoons
freshly squeezed lemon juice
2 dashes
Tabasco sauce (optional)

Combine the grits, water and salt in a rice cooker and cook on white rice setting. Once done, add the butter, cream, cheese and salt to stir well with the grits. Taste to adjust the seasoning as desired.

If cook the grits on the stove top, fill a non-stick saucepan with water and bring to a boil over high heat. Then add the grits with salt, lower the heat to low and simmer, covered, for 20 minutes, until the water has been absorbed. Then stir the butter, cream and cheese into the pot, season with salt, adjust if desired.

Place the bacon in a skillet and heat over medium heat, cook with stirring occasionally until crisp, about 10 minutes. Once done, use a slotted spoon to remove the bacon to a plate, leaving the drippings in the skillet.

Add the shrimps to the skillet to cook in a single layer. Sprinkle them with salt, pepper and cook for about 1 minute. Then flip them over and sprinkle with salt, pepper. Add scallions, garlic, lemon juice, Tabasco sauce (if used), the cooked bacon into the pan and continue to cook for 1 – 2 minutes more. Remove the pan from heat.

Spoon the grits into plate or bowl, top with sautéed shrimp mixture and serve immediately.
