Cajun shrimp and grits is an easy and quick to make dish but can bring to you meal number of flavors. With some ingredients that you may gather easily in your kitchen, within 30 minutes, you will get a tasty shrimp and grits with nice presentation to enjoy.

Ingredient

For the shrimp

1 lb

jumbo shrimps (peeled and deveined, tail-on)

1/2 teaspoon

coarse salt

1/4 teaspoon

freshly ground black pepper

1/4 teaspoon

cayenne pepper (optional)

1 tablespoon

canola oil

4 oz

andouille sausage (diced)

large red onion (sliced)

1/2

red bell pepper (sliced)

yellow bell pepper (sliced)

grape tomatoes (halved) – optional

1 tablespoon

chopped parsley

1/2 cup

dry white wine

1/4 cup

unsalted butter (cut into 8 cubes)

For the grits

1 1/4 cups

whole milk

1/4 cup

quick-cooking grits

1/2 cup

grated Gouda cheese

1 tablespoon

unsalted butter

1/2 teaspoon

coarse salt

1/4 teaspoon

freshly ground black pepper

How to do

Pat dry the shrimps and season them well with salt, black pepper and cayenne pepper (if used).

In a skillet, heat oil over medium-high heat then add the shrimps, sausage and onion, stir well. After 1 minute, add the bell peppers into the pan to stir and cook for 3 minutes, until they start to soften. Add the tomatoes (if used) and parsley to stir well with other ingredients in the pan.

Add the wine into the pan, stir well and bring to a boil. Cook the mixture in the wine for 2 – 3 minutes, or until the liquid has reduced by half. Stir the butter into the mixture until melted then taste to adjust the seasoning if needed. Remove the pan from heat and cover loosely to keep warm.

Make the grits. Add milk into a saucepan and bring to a boil over medium-high heat. Add the grits into the pan and cook, stirring frequently, for 5 minutes. Add the cheese with butter into the pan, stir and cook the mixture until creamy and smooth. Season the grits with salt, pepper and adjust if desired.

Divide the grits among bowls/ plates, top with the shrimps and serve immediately.
