Boiling crab

live Dungeness crabs or 6 live blue crabs

Mix butter, garlic, herbs, vermouth, lemon zest, lemon juice, salt, and black pepper in a pan. Heat the mixture over medium-low heat for 3 minutes. Once the butter has melted, remove the mixture from the heat and keep warm.

Pour water and vinegar into a large stockpot. Add lemon slices, kosher salt, and seafood seasoning, and bring the mixture to a boil. Place crab on a baking tray. Then put the tray in the freezer to chill for about 30 minutes, but not frozen.

Gently place each crab in the boiling water. Cover and bring the water to a boil again. Boil the crabs for about 20 minutes until cooked. Remove the boiling crabs from the heat and drain. Then, clean them and serve with warm butter sauce.
