Beer battered fish

Beer battered fish is a fried fish dish that commonly served with chips and popular in different countries. The batter with beer addition will make the fish to turn out more flavorful and crispy. The two components fried fish and chips are loved widely as a take-away-dish in numerous countries. Ingredient

For the fish

thick cod fillets (patted dry)

1 teaspoon

sea salt

1/2 teaspoon

pepper

1/2 cup

cornstarch (placed in a shallow dish)

For the batter

2

egg whites (whipped)

1 1/2 cups

plain flour

1 teaspoon

turmeric powder

1 teaspoon

baking powder

A pinch

of salt

6 oz (170 ml)

dark beer

For the chips

2 lbs

potatoes (peeled and cut into sticks)

For serving

1/2 teaspoon

sea salt (optional)

1/2 cup

of tartar sauce

How to do

Season each fish piece with salt and pepper then dredge in the cornstarch. Shake off the flour from the fish and set aside.

Heat about 2 – 3 inches of oil in a frying pan or heat oil in a deep fryer to 180oC/ 350oF. Meanwhile, prepare the batter.

Combine the flour, turmeric powder, baking powder and salt in a large bowl then add beer to mix until thick and smooth.

Beat the egg whites until peaks formed then fold into the batter.

Working in batches if needed, deep each fish fillet into the batter then carefully add into the hot oil to fry for about 10 minutes, or until crisp and golden, turning from time to time.

While the fish is being cooked, preheat the oven 180oC/ 350oF and prepare a large baking pan.

Once the fish pieces are cooked, remove them to a plate lined with paper towel to drain. Let the oil temperature heated back to 10oC/ 350oF before continue to fry another batch of fish.

Once done frying, transfer the fish pieces to the prepared pan and bake for another 10 – 15 minutes.

Rinse and pat dry the potatoes. Place the potatoes in the air fryer basket and cook at 190oC/ 375oF for 17 – 20 minutes, or fry in a skillet in batches with 1/2 cup of oil, or deep fry with 2 – 3 inch of oil in a deep fryer.

Serve the fish with a sprinkle of salt if desired, potato chips, tartar sauce and lemon wedges.
